These wee sweet treats are something one of my fav exes and I used to make in NZ, years ago. They are really easy and totally addictive. The recipe is not vegan but I made them dairy free with substitutions. Recipe below.
1 tbspn butter (or nuttelex/dairy free alternative)
1 c milk (or soy milk/dairy free alternative)
1 tbspn cocoa or 2 tbspns Milo (I used Koko Deluxe drinking chocolate - also dairy/gluten free)
1 1/2 c sugar (I only used 1 c and would probably use only half next time)
3 c rolled oats
1 c coconut
extra coconut for rolling
Combine butter, milk, cocoa and sugar in a saucepan and bring to the boil.
Remove from heat and pour over combined oats and coconut.
Mix and set aside to cool.
Once cool, roll into small balls and roll in coconut.
Best to refrigerate again until ready to serve.
